I have NVDI 5 succesfully installed on my STE. How do you set up an application to use the NVDI printer drivers rather than the ones in the application itself? For example does the application have to have an option to select 'use NVDI or something similar, or does NVDI just override the application's own printer configuration?

Anything that prints with speedo will/can use NVDI. If the program uses native printing then it wont and needs to be individually configured with its own printer drivers. Simple programs like 1st word don't use speedo/NVDI. There are others that use their own scalable fonts too, like Pagestream. That won't use NVDI either.
Give Atari Works a go. Pretty easy and does work with NVDI. Not sure if there is a list of supported Word/Document processors.
